Join us for dinner at The Barn at Lone Oaks Farm, where we’re excited to welcome Chef Cesar Vargas of Either/Or. Though Chef Cesar is deeply rooted in Mexican culinary traditions, his journey reflects a diverse blend of formal education and practical experience. After studying at DMACC Culinary, he gained international exposure through an internship in the Loire Valley, France. His professional achievements include roles as Executive Chef at Briarwood, Sous Chef at Lua Brewing, and Chef de Cuisine at Either/Or. Chef Cesar will lead the dinner Saturday evening, and Chef James Arbaugh curated the menu and will be prepping for the dinner alongside Cesar. James came to Iowa in 2019 to be the Executive Chef at Lua Brewing in Des Moines. Now Executive Chef overseeing the kitchens at both Lua Brewing and sister restaurant Either/Or, his prior restaurant experience includes Plumed Horse (San Francisco Bay Area) and Alinea (Chicago)—both Michelin-star restaurants. Chef James studied at the Culinary Institute of America in Hyde Park, New York. Beer pairing suggestions from Lua Brewing as well as wine pairing suggestoins from Gateway Market will be forthcoming.

Persimmon and Beet Salad - radish/ pomegranate/ nasturtium

Seared Scallop - fall squash puree/ apples/ chives

Mushroom Cavatelli - mascarpone/ parmesan/ truffle butter

Bison Striploin - potato gratin, green beans, beef jus
